Marinate your chicken anywhere from 30 minutes to 4 hours in our Allegro Tennessee Whiskey Marinade.
Preheat oven to 450 degrees. Stuff one garlic clove and one onion into the chicken’s cavity. Fill the bottom of the roasting pan with the onion, potatoes, and the rest of the garlic. Sprinkle the Italian seasoning and drizzle the olive oil over the vegetables.
Lay the chicken over the vegetables breast side down.
Cook in pre-heated oven for 30 minutes. Baste melted butter and reduce heat to 425. Return the chicken to the oven for 20 minutes. Take the chicken out of the oven and flip over so breast side is up. Return to the oven for 30 minutes. Baste with melted butter and cook for 15-20 minutes until skin is crispy and the inside reaches 165 degree F.
Remove the chicken from the pan and cover with aluminum foil. Rest for 15 minutes to allow juices to settle.
