Start your grill, smoker or oven: grills or smokers set to 250°.
Prep the tenderloin by removing silver skin (the shiny opaque band the length of one side of tenderloin).
Add tenderloin to container and pour Allegro Honey Garlic marinade all over, just enough to coat it.
Apply the dry seasonings all over the meat. Should only need about 1/8 to 1/4 cup total.
Let sit on meat while it comes to room temperature.
Insert an internal thermometer.
Once your cooking device, whether oven, grill or smoker, is up to temp, put the tenderloin over indirect heat.
Pour about 1/4 cup of the Honey BBQ Sauce in a small container to mix with enough white wine vinegar to get a glaze with a slightly thinner consistency. (You want the flavor, but don’t want to mask the layers of flavor you’re about to build.)
Once internal temp reaches 130-135°, add a few layers of the glaze.
Continue cooking until internal temp is 140°
Let rest lightly tented so that it comes up to 145° internal temperature
Remove tent and slice, against the grain always, any thickness you desire.
