Butterfly the Meat: Slice the pork tenderloin thin lengthwise to create long, flat strips of meat.
Marinate: Place the strips in a container and cover thoroughly with Allegro Honey Garlic marinade. Marinate in the refrigerator overnight for maximum flavor.
Inner Seasoning: Lay the marinated strips flat and sprinkle the inside with a light layer of your favorite pork seasoning.
Add Fillings: Spread a layer of cream cheese down the center of each strip, followed by a spoonful of candied jalapeños.
Roll and Skewer: Roll the strips tightly to create the "pinwheel" shape. Secure several pinwheels together using double skewers to hold them in place during cooking.
Outer Seasoning: Season the outside of the rolled pinwheels generously with more seasoning.
Preheat: Set your smoker to 275°F. The video uses wood logs and a fire starter bag to establish the heat and smoke.
Cook: Place the skewered pinwheels on the smoker grates. Smoke for approximately 35 minutes (or until the internal temperature reaches 137°F).
Rest and Serve: Remove from the smoker and let the meat rest before slicing into individual pinwheels.
