In a small saucepan or cast iron skillet, combine the butter, Allegro Honey Garlic marinade, Dijon mustard, apple cider vinegar, and Allegro Signature All-Purpose seasoning.
Simmer the mixture over low heat until it becomes glossy. (Note: Do not rush this process; let it reduce slowly to develop the proper consistency.)
Preheat a cast iron skillet over high heat.
Place the medallions in the dry skillet to achieve a hard sear.
Sear for approximately 3 to 4 minutes per side.
Once the medallions are flipped and nearly cooked through (internal temperature of 145°F), pour the butter glaze over the meat.
Use a spoon to continuously baste the pork with the bubbling glaze for the final 1 to 2 minutes of cooking.
Remove from the heat and let the meat rest for 5 minutes before serving so the glaze can set.
