  • 8 oz fusilli pasta
  • 1 lb raw shrimp (deveined, cleaned with tails removed, 10/12 or 16/20 size)
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 1/2 cup heavy cream
  • 1/3 cup ricotta cheese
  • 1/2 cup parmesan cheese (fresh is best as it melts nicely)
  • 1/4 cup fresh lemon juice
  • 1/2 sliced cherry tomatoes
  • Zest of 1 fresh lemon
