Marinate deer meat in the refrigerator overnight or at least 12 hours in Allegro Game Tame Marinade.
Butterfly the back strap or tenderloins down the center of the meat, and open it like a book.
Layer the opened up sections of the meat with cream cheese.
Season it with BBQ rub to taste.
Put a good layer of candied jalapenos down on one side of the meat. Close up the meat.
Season the outside with a light layer of all-purpose seasoning.
Wrap the meat in bacon and secure it with a fe wtoothpicks.
Season the outside of the bacon with BBQ rub to taste.
Cook at 300 degrees, flipping halfway through cook, until you reach an internal temperature of 127 degrees for medium rare or your preferred level of doneness.
Let rest for 10 minutes loosely wrapped in aluminum foil. Slice into medallions and enjoy.
