Ingredients

2 1/2 lbs pork chops (thick cut so you can stuff the center)
1 bottle of Allegro Tennessee Whiskey Marinade
1/4 cup chopped red onion
1/4 cup cream cheese
1/4 cup feta cheese
1/4 cup artichokes hearts
1/3 cup sliced mushrooms
2 tbsp of Dry Ranch Dressing mix
2 tbsp fresh chopped cilantro
1/4 cup of fresh spinach – chopped or whole leaf you choose
1/4 cup of fresh basil – chopped
1/3 cup of fresh grated asiago cheese

Directions

Begin by slicing through the center of the Pork Chops – you are making a “butterfly cut.”
Place the Chops in a bowl and cover with Allegro Tennessee Whiskey Marinade – cover and allow to marinate for at least 45 mins to 1 hour – overnight is GREAT too.
Prepare the Stuffing mixture next, by combining all remaining ingredients in a bowl, and blending thoroughly – I find that using my hand is the best way to ensure all the ingredients are blended well, otherwise it will just a little more effort with a spoon.
To prepare the Chops – remove from the marinade, you can season with your favorite seasonings, salt & pepper – I use a little blackened seasoning sprinkled over the chops.
Take a large spoonful of the stuffing mixture and spoon it into the butterflied chop. Close up the chop, using a couple of toothpicks to close it up and hold it closed.
Heat about ¼ tbsp of Olive Oil in a skillet and place the chops in the skillet to sear on both sides, add just a bit more of the Allegro Tennessee Whiskey Marinade while searing for some extra flavor. (Sear for about 3-4 mins on each side till nicely browned, you want to make sure those juices are locked in) While searing go ahead and preheat your oven to 385 degrees.
Once you finish searing the Chops – place them in the oven and allow them to continue cooking for about 25 minutes. If your searing pan is oven safe - just place the whole hot pan right in the oven. If not, you can place them on a baking sheet and let them finish there.
Once done, serve with your favorite sides. I love serving them with oven or pan roasted veggies.
