Ingredients

  • 2 Wild ducks, 1-1/4 lb each
  • 2 Tbsp butter, unsalted
  • 1 tsp paprika
  • Allegro Game Tame Marinade
  • 1/2 tsp salt
  • 1/4 tsp Tabasco sauce
  • 1 lb sliced bacon

Directions

  1. Place ducks in Allegro Game Tame Marinade for 3–4 hours.
  2. Remove and rub duck with butter, salt and Tabasco sauce. Wrap in cheese cloth.
  3. lace ducks, breast side down, on rack in greased shallow pan. Roast at 325 degrees for 1 hour, basting occasionally.
  4. Turn. Roast for 1/ to 1 hour longer.
  5. Remove cheese cloth. Cover each duck with bacon slices. Roast until tender.
  6. Serve with wild rice.
